Not What He Expected

Ever since Lola adopted us, Matt has dreamed of her sleeping in his bed. This is difficult because he has a loft and she likes to sleep next to me on the floor.
A few weeks ago, we put his mattress under his loft on the floor and last night his dream finally came true.
However, I don't think it went quite as he hoped.




This is what he woke up to: Lola ate Pluto! Yes, that is stuffing all over the end of his bed. I guess she was jealous of another dog sleeping in his bed.

2 Favorite Dressings

We jumped back on the South Beach eating wagon a couple of weeks ago. Of course, Richard is hardcore and has lost mucho weight. Me, I cheat too much! I think I've dropped a few pounds but have no clue how much.

The main thing I do when I am eating SB, is eat tons of salads and fresh veggies. I'm a dressing snob, the two brands I like are Newman's and Brianna's. Most of all, I LOVE homemade dressing (small group ladies, I swoon when you make homemade dressing)!

Since I haven't posted in like a zillion years, I thought salad dressing was the obvious choice.

Greek Dressing
1/2 c EVOO (or canola oil)
1 1/4 tsp of each:
garlic powder
dried basil
dried oregano
1 tsp of each:
pepper
salt
onion powder
Dijon
2/3 c red wine vinegar

Mix all but vinegar in a jar. Then add vinegar, cover, and shake away. This stores for quite awhile in the fridge.

Ranch Dressing/Dip
1/2 c mayo
1/2 buttermilk
1 Tbsp dried parsley
1 tsp onion powder
1/2 - 1 tsp garlic powder (1 tsp is pretty garlicky)
1/8 tsp of paprika
pinch cayenne

Mix all ingredients. If it is too runny, I will add sour cream or Greek yogurt to thicken.
I have also noticed that real mayo makes a thinner dressing. I usually use light mayo and low fat buttermilk.

Our Christmas


I find that a Picasa collage is the lazy blogger's friend for posting pictures. I don't know about you guys, but it takes me FOREVER to load photos to my blog. Of course, during all the family gatherings, I was too busy watching instead of taking pictures. I have to get better at capturing moments with the grandparents and other family members!!

We had a great Christmas! We spent time with both sides of the family and friends, ate entirely too much, slept in, and became best friends with our Wii and new Wii Fit board.

One of the best parts for me was reading the Jessie Tree advent by Anne Voskamp; I will definitely do this next year. It really helped to keep me in the right frame of mind leading up to Christmas day and we learned a great deal too.

New Years Eve was fun too. Of course, I don't have any pictures of that night either. We had a couple of families over and celebrated with hamburgers, brownie waffle sundaes, and the Wii. Fresh brownie waffles are the bomb! Especially piled high with strawberries and fresh whipped cream. Yum-O!
